Our signature cookies are our macarons, made lovingly with local ingredients and inspired by traditional and local Sabah cuisine. We will create new macaron flavours and fillings from time to time to surprise and delight our diners and guests. Macarons are circular French sweet meringue-based confections made with egg white, icing sugar, granulated sugar and ground almonds. They are usually filled with butter cream, ganache or jam, and sandwiched between two cookies. The name is derived from the Italian word ‘maccarone’ or ‘maccherone’, which refers to the meringue.
Currently, our signature macaron is Chef Nicholas’s very own captivating creation – sambal tuhau with cream cheese! A traditional delicacy of the Kadazan Dusun people of Sabah, tuhau is a local appetizer made from wild ginger, and usually served pickled and consumed with white rice. It adds a unique and pleasant tartness to balance out the sweetness of the macaron and the rich creaminess of the cream cheese. A unique match made in heaven. A definite must try!
Lemon lovers must sample our Lemon Shortbread, prepared from Chef Nicholas’s old family recipe. Made from the largest and juiciest lemons and the finest pure butter, it gives a zesty, zingy burst of citrus flavour tempered by the richness of the beautiful crumbly and buttery cookie. Shortbread is a type of traditional biscuit made from sugar, butter and flour. The shortbread’s simplicity makes it a wonderful base for innovative desserts, and it can be made plain, or flavoured with sweet fruits or even savoury ingredients. Originating from Scotland, shortbread was traditionally made from one part sugar, two parts butter and three parts flour, and the first printed recipe (in 1736) was from a Scotswoman named McLintock.
If you want something crunchy, try our nutty Biscotti Biscotti. It is a traditional Italian cookie made with toasted almond flakes. It’s a great snack to complement your choice of hot drink. Originating from the city of Prato, in Tuscany, Italy, Biscotti are twice-baked, oblong-shaped, crunchy cookies. They are enjoyed traditionally by dipping into a drink.
