Besides our lobsters, diners may also opt to add on giant tiger prawns to go with their nasi lemak. We also have giant squid which goes very well with our nasi lemak dish. Our squid is perfectly cooked to have a nice texture which isn’t too chewy.
Nasi lemak is a Malaysian dish, literally meaning “rice in cream” in Malay language. Tavern’s lobster nasi lemak is made of rice cooked with coconut milk, pandan leaves, local herbs and spices. The secret of Tavern’s fragrant lobster nasi lemak is we partially cook the rice the night before. The next morning, we complete the cooking process by adding coconut milk and pandan leaves to give it a wonderful aroma. Not only that, we also add garlic, shallots, a bit of ginger and a few stalks of lemongrass into the boiling rice. These local spices enhance the delightful flavours of Tavern’s lobster nasi lemak.
Malay in origin, nasi lemak is traditionally served with fried anchovies (called ikan bilis in Malay language), roasted peanuts, sliced fresh cucumbers, boiled egg and sambal sauce made from chillies.
The sambal is surely nasi lemak’s signature condiment. Some Malaysians prefer to have sambal ikan bilis which is chilli paste made of anchovies while others prefer sambal tumis, which is fried chilli paste. Tavern’s sambal is made in our own kitchen using dried chillies, shallots, garlic and shrimp paste (known as belacan). A small quantity of sugar and tamarind give our sambal an irresistibly tangy, sweet taste. We don’t use commercially ready-made sambal. Everything is made from scratch!
Our lobster nasi lemak is then garnished with freshly sliced cucumber and tomatoes, served on top of banana leaves in a traditional tampi, a handmade weaved bamboo container.
