Tuhau, which is a traditional delicacy of the Kadazandusun people of Sabah, can be described as a local appetizer made from wild ginger. Prepared from the shoots of the ginger-like species Etlingeracoccinea, tuhau is usually served pickled and consumed with white rice. The banana blossom is steamed first. Then, the sauce is prepared ̶ garlic, onions, ginger, dried shrimp and assorted spices are fried till fragrant, then simmered with thick coconut milk. The steamed banana blossom is added and the dish is done with the sauce has thickened.
For red meat lovers, there’s the substantial Mutton Fried Rice. Mutton is stir-fried with rice infused with local ingredients, and served with an amazing spicy pumpkin side dish.
