With the introduction of the new menu at Tavern Kitchen & Bar, Imago Shopping Mall, Kota Kinabalu, we have three local favourites added to the menu. They are our favourite local food too, so try it, and you will not be pleasantly delighted.
First of all, we have the Nasi Goreng Kampung with Fried Hinava. Nasi goreng kampung is a much-loved dish in both East and West Malaysia. No traditional Malay restaurant anywhere is complete without it. We have taken this tasty meal and revved it up a notch by incorporating an element of Sabahan cuisine, called hinava. Hinava is basically raw fish salad, a local Kadazandusun delicacy. It is a speciality of Sabah. If you visit Sabah, you must try Hinava! It is the local version of the popular Japanese sashimi. The Hinava mainly consists of minced fish marinated with lime juice, which ‘cooks’ the fish. The citric acid kills the bacteria in the fish. The minced fish is usually mixed with other ingredients such as onions, grated bambangan seeds or ginger. Hinava is usually available during the Kadazandusun’s Kaamatan celebration, but you can now get it all year round at Tavern Kitchen & Bar.
Another interesting dish we offer is the Nasi Goreng Tuhau with Ayam Berempah and Bambangan, which is tuhau fried rice with marinated chicken, bambangan, fried egg, sambal and prawn crackers. Tuhau is a traditional delicacy of the Kadazandusun people of Sabah. It can be described as a local appetizer made from wild ginger. Prepared from the shoots of the ginger-like species Etlingera coccinea, tuhau is usually pickled and consumed with white rice. Adding the tuhau to fried rice will produce a unique and delicious combination that you will enjoy. Bambangan is locally known as wild mango because of the way it smells. Popular in Sabah, it is usually pickled or cooked with fish for its distinctive flavour. The bambangan pickle is favourite appetizer for the Kadazandusun tribe in Sabah.
Another local delight we have at Tavern is Lemongrass Percik Chicken, which is oven-baked boneless chicken thigh marinated with lemongrass, and served with garlic fried rice, Sabah seaweed, raw mango salad, papadom, and percik sauce. The juicy boneless chicken drizzled with percik sauce will be hard to resist, and it will satisfy your cravings for delicious chicken, grilled to perfection.
